Farro: Grain of the Legions ...

"Grano Farro has a long and glorious history: it is the original grain from which all others derive, and fed the Mediterranean and Near Eastern populations for thousands farro recipeof years; somewhat more recently it was the standard ration of the Roman Legions that expanded throughout the Western World. Ground into a paste and cooked, it was also the primary ingredient in plus, the polenta eaten for centuries by the Roman poor. Important as it was, however, it was difficult to work and produced low yields. In the centuries following the fall of the Empire, higher-yielding grains were developed and farro's cultivation dwindled: By the turn of the century in Italy there were a few hundreds of acres of fields scattered over the regions of Lazio, Umbria, the Marches and Tuscany.

Farro would probably still be an extremely local specialty had the farmers of the French Haute Savoie not begun tofresh bread delivered daily to Ludgate's supply it to elegant restaurants that used it in hearty vegetable soups and other dishes. Their success sparked renewed interest in farro among gastronomes, and now the grain is enjoying a resurgence in popularity in Italy as well, especially among trendy health-conscious cooks."

Summer's fruits can help fight cancer, slow aging and more

In a world of fast food hamburgers, chocolate snack cakes and puffed sugar cereal, the fresh fruit of summer can offer a refreshing, sweet reprieve. And on top of their fabulous flavor, the tangy berries of the season are also loaded with wonderful nutrients.

Amy Lee, a clinical dietitian with Aurora Health Care at Memorial Hospital in Burlington, VT said all berries are good sources of fiber and vitamin C and are high in antioxidants. Eating them lowers your risk of cancer and heart disease, she said. "We breathe in different pollutants and they destroy tissue," Lee said. "The antioxidants fight free radicals; (they) counteract that and keep us healthy." Berries may even help slow the aging process and boost memory, she said.

Wait, there's more good news. When they're dark red, blue or almost black, and ready to fall off the bush, is when berries are the most beneficial. "The darker, deeper color tells you they have more nutritional value - just like with vegetables," Lee said. [ original article ]

New Album from Traonach "Macintosh Jon" traditional Irish Music made in Ithaca ...  This wonderful recording is on sale at Ludgate Farms. Some history... From Traonach's first album: "About the name Traonach ("TRAY-knock") Traonach is the Gaelic term for the corncrake, a reclusive and entirely inoffensive bird formerly common throughout Europe, Central Asia, and Northern Africa. In Ireland its gentle, evocative call (although it is quite raucous at night) was once as familiar as the cuckoo's, but modern farming developments (particularly the increased use of machine harvesters) have brought the traonach to the brink of extinction; it is a very rare class of creature in most of Europe and even Ireland today. The Traonach has been celebrated in Irish mythology. It is shown intertwined with a heron in the sixth-century Book of Kells; in the stamps of numerous countries from the Ukraine to Ireland, and in print or song by the likes of Flann O'Brien, Archie Fisher, the Pogues, and Silly Wizard. We all liked the name and the rural association (for this music is of a famously rural cast) but when we heard that Felix McGowan's nickname for the youthful Ed was "The Corncrake," the vote was unanimous."

Hot weather recipe idea:

Quick and simple -- You'll need -- Fresh Mozzarella, fresh fresh tomatoes and basil at Ludgate'sbasil, homegrown or fresh vine ripe hothouse tomatoes and some really nice extra virgin olive oil with a little aged spanish vinegar. Slice the tomatoes and mozzarella and spread on a plate lightly salt, then sprinkle the vinegar first and then the oil over everything. Garnish with basil .. yum!

They are handcrafted from cold-pressed, naturally extracted, unrefined pure virgin coconut oil. Essential oils are added in some recipe. This natural oil, for thousands of years has bestowed health and radiance to the hair and skin of the South Pacific Islanders. Exposed to the blistering sun, the chafing of ocean breeze and weather conditions they are still famed for their beautiful hair and skin. If it protects and beautifies in harsh conditions, imagine what it will do for your skin in your environment. Cuban Mahogany (swietenia mahagoni), a rare plantation grown and sustainable harvested timber on Palau Island is a timelessly elegant wood of choice for any woodworking project. It has that mystique appeal! It was preferred by fine furniture builders as one of the most prized furniture grade wood in the 18th and 19th centuries. Other tropical woods used on these handcrafted value added products are Alexandria Laurel (Calophylum inophylum), Narra (Pterocarpus indicus), Sandalwood (Adenanthera pavonina L.), Mango tree (Magnifera indica) and Gmelina (Gmelina palauensis). I often utilize and turn board end trims, shorts and narrow boards that otherwise can not be sold as lumber to build these handcrafted value added products such as various kitchen, home and office/desk accessories. University of Helsinki researcher Katri Raikkonen and colleagues enrolled more than 300 pregnant women and asked them to rate their stress levels and chocolate consumption.

Six months after their child was born, the mothers were asked to gauge their child's behaviour in such fear, soothability, smiling and laughter.

"The babies born to women who had been eating chocolate daily during pregnancy were more active and 'positively reactive' -- a measure that encompasses traits such as smiling and laughter," New Scientist says. [ more ]

Green Tea Confuses Cancer Cells

(CBS/AP) Research at the Mayo Clinic shows that a component in green tea helps kill cells of the nation's most common form of leukemia.

The scientists say the green tea component -- EGCG -- helps kill the cancer cells by cutting off the communication signals they need to survive.

The cells used in the study were from patients with B-cellRepublic of Tea GREEN TEA at Ludgate Farms chronic lymphocytic leukemia, or CLL. It's most often diagnosed in patients in their mid-to-late 60s -- and currently, there is no cure. The Leukemia & Lymphoma Society says symptoms usually develop gradually. Patients tire more easily and may feel short of breath when physically active. They may lose weight. They may experience frequent infections of the skin, lungs, kidneys or other sites.

The findings, reported in an early electronic article in the journal Blood, show green tea's EGCG killed leukemia cells in eight of ten patient samples tested. [ rest of article ]


Organic Bananas  ...

We have a new more reliable source for organic bananas. Organic Produce at Ludgate FarmsBananas are a tropical fruit... this may seem obvious, but they really do not respond well to refrigerated produce trucks and walk in coolers. In many markets they get thrown in with the rest of the produce for storage and then they turn gray and ugly and the flavor is off. Ours are never refrigerated (just like our tomatoes) which is why we don't always have them and also why when we do have them they are yellow, not gray.



Back To School -- Junk Food Equals Big Profits, Minus Healthy Kids

As children head back to public schools this fall, they will face not only the usual challenges brought on by shrinking budgets, but also an increasing onslaught of junk foods, thanks to a powerful industry that profits from peddling fat and sugar.

In May, a national survey by the Center for Science in the Public Interest revealed that 75 percent of beverages and 85 percent of snacks sold in school vending machines were of poor nutritional quality -- soda, chips, cookies and candy. While nominal nutrition standards apply to federal school meals, anything goes for all other foods, which are sold mere steps away from the lunch line. [ more school lunch articles ]

Christi Sobel: "My hometown and birthplace is Ithaca, NY, and I lived there until I went off to college, when I more-or-less relocated to the Phildelphia area. A few years "Gerbera Daisy" original artwork by Christi Sobelafter finishing my undergrad degree in biology and studio art, I decided I wanted to follow my heart, leave crowded Philly for greener and more relaxed pastures, and go ahead and be an artist. Fortunately, it's been a successful and adventurous life, using my pen as my passport to many places in the US and soon to the world. In 1998, I completed a graduate course of study in Scientific Illustration at UC Santa Cruz, and interned at the Royal Botanic Gardens, Kew, in London, in the fall of 1998. I currently reside in beautiful upstate NY, where I am freelancing on a variety of projects and developing a line of notecards featuring my artwork."
